6 Food Safety Checks Every Bhandara and Prasad Kitchen Must Pass Before Serving

A bhandara feeding five hundred people carries food safety risks that a home kitchen never faces. Contamination at scale moves fast and hits hard. These six checks, covering hygiene, storage, water, and cooking temperatures, are what every prasad kitchen organiser needs to run through before the first serving spoon goes in.

1. Water Source and Quality

The single biggest contamination risk in any large prasad kitchen is the water. A 2019 FSSAI surveillance report found that 34% of food safety violations at mass catering events in India traced back to contaminated water used in cooking or washing. Before a bhandara begins, confirm the water source: municipal supply treated with chlorine, or a tanker with a valid quality certificate. Water stored in open drums overnight is not safe for cooking, washing vegetables, or cleaning utensils. If the kitchen is running for multiple days, test stored water with a simple ORP meter, available at most laboratory supply shops for under ₹2,000.


2. Cold Chain for Perishables

Dairy, paneer, and cooked rice left at room temperature between 5°C and 60°C enter what food scientists call the danger zone, the temperature range where bacterial populations can double every 20 minutes. A bhandara kitchen preparing kheer or dahi-based dishes the night before service needs working refrigeration, not just a cool room. Check that refrigerators are holding below 5°C with a thermometer, not by feel. If the event is outdoors and refrigeration is unavailable, prepare dairy-based prasad on the morning of service only, and serve within two hours of cooking.


3. Handler Hygiene and Health Screening

Volunteers in a bhandara kitchen rotate constantly, and that rotation is a hygiene gap. Anyone with an active skin infection, fever, diarrhoea, or respiratory illness must not handle food, this is not a suggestion from etiquette but a requirement under the Food Safety and Standards Act, 2006, which applies to mass catering operations. Before service begins, designate one person to check that every handler has washed hands with soap for at least 20 seconds, is wearing a clean apron, and has hair covered. Bare hands touching cooked prasad directly is the fastest route to staphylococcal contamination.


4. Cooking Temperature Verification

Visual cues, steam, colour change, bubbling, do not confirm that food has reached a safe internal temperature. Dal and sabzi served at a bhandara should reach a minimum of 75°C at the core, not just at the surface. A probe thermometer costs under ₹500 and removes all guesswork. This matters most for large batch cooking in heavy-bottomed vessels, where the centre of the pot can lag 10 to 15 degrees behind the sides. Stir large batches thoroughly before measuring, and measure from the centre.



5. Serving Line Sanitation

The serving area is where most post-cooking contamination happens. Ladles left resting on the ground between servings, flies settling on uncovered pots, and servers reaching into vessels with unwashed hands are all standard bhandara problems. Cover every pot between servings with a clean lid or cloth. Keep ladles in a separate clean vessel with hot water, not on the ground. If the queue is long and serving takes more than an hour, reheat food to above 75°C before continuing, food that has been sitting open at ambient temperature for over an hour needs to go back on the flame before it goes into anyone's plate.


6. Waste and Leftover Management

What happens to prasad after the bhandara ends is as much a sanitation issue as what happened before it started. Leftover cooked food left in open vessels overnight breeds bacteria at a rate that makes it unsafe by morning, regardless of how well it was cooked. Designate a disposal plan before the event: leftover food distributed within two hours of the bhandara ending is generally safe if it has been kept covered and hot. Food that has cooled to room temperature and sat for more than two hours should not be repackaged and redistributed the next day. Compost bins or municipal waste pickup, arranged in advance, keep the kitchen site clean and prevent animals from accessing food waste.



A bhandara that feeds a thousand people without incident is not luck. The kitchen that pulls it off has usually run these checks so many times that they feel like ritual, which, given the context, is exactly what they should become.
