Instant Noodles
Maggi's 2015 recall rattled Indian households for about six months. Then it came back, and so did the habit, except by then it had stopped being a snack. It was dinner, or a quick lunch between school and tuition, or what a working parent put together at 9 p.m. The NOVA food classification system, developed by Carlos Monteiro and colleagues at the University of São Paulo and published in Public Health Nutrition in 2019, places instant noodles firmly in Group 4: ultra-processed. The defining feature is not any single ingredient but the combination of refined flour, flavour enhancers (typically disodium inosinate and disodium guanylate), hydrogenated fat, and sodium levels that can hit 900 mg per serving, nearly 40% of the WHO's recommended daily limit in one bowl. The masala packet is the problem. The noodle block is just the vehicle.
Packaged Masala Oats
Oats built a reputation as a clean, whole-grain breakfast. Packaged masala oats borrowed that reputation without earning it. A standard 40g serving of a leading Indian brand contains between 600 and 750 mg of sodium, along with maltodextrin, flavour compounds, and dehydrated vegetables that contribute texture but negligible nutrition. The ICMR-NIN dietary guidelines, updated in 2024, explicitly categorise ultra-processed foods as a separate risk tier from minimally processed foods, and flavoured instant oats fall into that tier. Plain rolled oats with a tempering of mustard seeds and curry leaves is home cooking. The sachet version is a packaged food product that happens to be eaten at breakfast.
Readymade Curry Paste
This one has the most convincing disguise. Curry pastes and sabzi masala pouches, sold by brands including Everest, MDH, and a growing number of regional players, contain real spices. They also contain added starch, citric acid, permitted synthetic colours, and in many formulations, anti-caking agents and preservatives. The argument for them is time: a working household in Mumbai or Bengaluru cannot always grind a fresh masala. That argument is real. But the paste that goes into the pan is not the same thing as a masala ground at home, and treating it as equivalent has downstream effects on additive intake that accumulate across daily meals. One paste pouch per meal, three meals a week, adds up to a consistent low-level additive load that plain spices do not carry.
Flavoured Yogurt
Plain dahi is a fermented food. Flavoured yogurt in a plastic cup is a different product. The fruit compote layered at the bottom of a commercial strawberry or mango yogurt typically contains sugar, modified starch, artificial flavouring, and in some formulations, carrageenan as a stabiliser. A 100g serving of a popular Indian brand's fruit yogurt can carry 12 to 15g of added sugar, comparable to a small dessert. The live cultures that make plain dahi genuinely useful for gut health are often present in lower counts in flavoured variants, because the acidic fruit layer and additional processing affect bacterial viability. Households that have replaced the steel bowl of homemade dahi with a flavoured cup from the dairy aisle have made a nutritional trade they may not have intended.
Packaged Multigrain Bread
The word multigrain does real marketing work. It implies whole grains, fibre, and a step up from white bread. What it legally requires, in India, is only that more than one grain is present, not that those grains are whole, not that refined flour is absent, and not that the fibre content meets any threshold. Most packaged multigrain breads sold in Indian supermarkets list refined wheat flour (maida) as the first or second ingredient, followed by sugar, emulsifiers (typically E471 and E472), and preservatives including calcium propionate. The NOVA classification places them in Group 4 alongside the noodles and the oats sachets. A household that switched from white bread to multigrain bread believing it made a health upgrade may have only changed the label.
Instant Soup Sachets
Soup carries the cultural weight of something restorative, something a grandmother made when you were ill. The sachet version, whether tomato, sweet corn, or mixed vegetable, is almost entirely sodium, modified starch, and flavour compounds. A single serving of a leading Indian brand's tomato soup sachet contains over 800 mg of sodium. The vegetable content is dehydrated and minimal. There are no meaningful amounts of fibre, protein, or micronutrients. Households that serve instant soup as a light dinner or a sick-day remedy are serving a flavoured sodium delivery system, not a restorative food. The resemblance to actual soup is aesthetic.
The pattern across all six is the same: a processed product arrived in Indian kitchens as a convenience, stayed because it was fast and familiar, and eventually crossed the line into what households call cooking. The NOVA framework's most useful insight is not that these foods are bad but that they are a different category of thing, industrially formulated, not cooked. Once a household stops noticing the difference, the additives, sodium, and refined ingredients stop being occasional and become the baseline.
