Most Indian kitchens run gas stoves for hours daily, often with windows shut. The fumes released during cooking, nitrogen dioxide, carbon monoxide, particulate matter, don't just irritate your throat. They accumulate in your lungs, quietly degrading function. Here's what the science says about indoor cooking exposure and why ventilation is the one habit that changes everything.
The Air Inside Your Kitchen Is Often More Toxic Than Outside
Nitrogen dioxide is not a slow-burn threat. At elevated indoor levels, it inflames the lining of the airways, reduces the lungs' ability to fight off respiratory infection, and worsens existing conditions like asthma and chronic obstructive pulmonary disease. The WHO classifies NO2 as a significant respiratory hazard at mean annual concentrations above 10 micrograms per cubic metre. A gas stove running without ventilation in a closed kitchen can produce that in a single cooking session.
What the Fumes Actually Contain
PM2.5 from cooking fumes is not identical to outdoor PM2.5 from vehicle exhaust, but the lung's response to it is similar: inflammation, reduced elasticity, and over years, measurable decline in forced expiratory volume. A 2019 study by the Indian Council of Medical Research (ICMR) flagged indoor air pollution from cooking as a significant contributor to the country's respiratory disease burden, particularly among women who spend the most time in the kitchen.
Carbon monoxide adds a separate layer of risk. It binds to haemoglobin more readily than oxygen does, reducing the blood's capacity to carry oxygen to tissues. Chronic low-level CO exposure from daily cooking without ventilation produces symptoms, fatigue, mild headache, reduced concentration, that are easy to attribute to almost anything else.
Why Indian Kitchens Face a Specific Risk
Cooking methods matter too. High-heat techniques, tempering mustard seeds in hot oil, charring onions directly over a flame, pressure-cooking over sustained high heat, generate more combustion byproducts than low-and-slow methods. The fumes from burning oil combine with gas combustion products to create a more complex pollutant mix than either source alone.
What Happens to Lung Function Over Years
Children are disproportionately affected. A 2021 meta-analysis in The Lancet Respiratory Medicine found that children living in homes with gas stoves had a 42% higher risk of current asthma compared to those in homes with electric stoves. The airways of children are still developing, and repeated fume exposure during this period can set a lower baseline lung capacity that persists into adulthood.
For adults with pre-existing conditions, asthma, bronchitis, or early-stage COPD, unventilated gas cooking is not a background risk. It is an active trigger.
Ventilation Is the Single Most Effective Intervention
Where structural changes aren't possible, the sequence of actions still matters. Keeping kitchen doors closed to prevent fumes from spreading to living areas, opening windows on both sides of the home to create cross-flow, and stepping away from the stove during high-heat phases all reduce cumulative exposure meaningfully.
The lungs do recover from short-term irritation. The question is whether the recovery window between cooking sessions is long enough, and that depends almost entirely on how much of the fume load was removed by ventilation rather than inhaled.
Every kitchen has a fixed volume of air. Without ventilation, that air absorbs every byproduct of every flame. The lung damage that accumulates from years of unventilated gas cooking is not dramatic in any single session, it is the sum of thousands of ordinary meals prepared in a closed room, each one borrowing a little more capacity from an organ that never announces the debt until it can no longer pay it.
