On the ISS, astronauts report that their favourite food tastes like cardboard. It has nothing to do with the cooking. Microgravity shifts body fluids toward the head, creating permanent congestion that dulls smell, and smell is 80 percent of what we call taste. What space does to hunger, craving, and the simple pleasure of a meal is stranger than any equipment failure.
Your Head Fills With Fluid and Your Nose Stops Working
The consequence for eating is immediate and severe. Smell accounts for roughly 80 percent of what the brain registers as taste. Block the nose and a ripe mango tastes like wet cotton. NASA researchers have documented this consistently since the Apollo era: astronauts in orbit report that familiar foods taste flat, muted, or simply wrong. Some describe hot sauce as tasting like water. Others stop recognising foods they have eaten their whole lives.
The fluid shift does not fully reverse during a mission. Astronauts adapt to it, but the nasal congestion persists, which means every meal for six months on the ISS is eaten with a compromised sense of smell.
What the Menu Actually Looks Like
Bread is banned. Crumbs float, lodge in equipment, and can be inhaled. Tortillas replaced bread on NASA missions in the early 1990s and have stayed ever since. Salt and pepper exist only as liquids in squeeze bottles, because loose granules behave like crumbs in zero gravity.
The food is nutritionally precise. Each astronaut's daily intake is calculated against their body mass, mission duration, and the specific physical demands of their schedule, including spacewalks. Caloric targets typically run between 1,900 and 3,200 calories per day depending on the individual. What the menu cannot fully account for is appetite. Most astronauts report eating less than their targets, not because the food is scarce but because the desire to eat diminishes in orbit.
When Smell Goes, Craving Follows
This is why astronauts consistently reach for intensely flavoured foods. Tabasco sauce is one of the most requested condiments on the ISS. Shrimp cocktail, heavily seasoned with horseradish, became legendary among early shuttle crews specifically because the horseradish was strong enough to cut through the congestion. The pattern holds across space agencies: Russian cosmonauts favour mustard and strong pickled foods; Japanese astronauts on ISS missions have requested intensely seasoned ramen variants.
Nutrition researchers at NASA's Johnson Space Center have studied this craving shift and found that astronauts' food preferences in orbit often diverge sharply from their stated preferences on Earth. Foods they considered too spicy, too sour, or too pungent before launch become the only things that register as food once they are up there.
The Loneliness of Eating Without a Table
There is no kitchen in the conventional sense. Food is prepared at a small galley using a water dispenser and a food warmer that reaches about 70 degrees Celsius. Astronauts eat floating, often alone, anchoring their food trays with velcro. The communal meals that mission planners encourage, the crew eating together at the same time, happen inconsistently, disrupted by sleep schedule differences, EVA preparations, and experiment timelines.
Psychological research conducted on ISS crews and in Antarctic isolation analogue studies has found that food-related morale problems are among the most consistent complaints on long missions. The issue is not hunger in the physical sense. It is the absence of pleasure, the flattening of an experience that on Earth carries enormous social and emotional weight. A meal that tastes of nothing, eaten alone while floating, is a different category of experience from the same meal eaten at a table.
Gaganyaan and the Question of Indian Food in Orbit
Shubhanshu Shukla, selected as one of Gaganyaan's astronaut candidates, will face the same fluid-shift congestion as every other astronaut in orbit. The DFRL's food scientists are working on formulations that push flavour intensity high enough to remain perceptible through the congestion, essentially engineering food to taste correct when the nose is 40 percent blocked. Dishes under development include variants of dal, khichdi, and vegetable preparations in retort pouches.
Sunita Williams, of Indian heritage and a veteran of two long-duration ISS missions, has spoken about missing the specific smell of home-cooked food as one of the more persistent sensory absences in orbit. The smell, not the taste, because in space, the smell is the taste.
The body in microgravity is not broken. It is doing exactly what it was built to do in the absence of gravity, redistributing, adapting, surviving. The problem is that the food system, the social rituals, and the neurological architecture of hunger were all built for a planet. When you remove the planet, the meal becomes something you consume rather than something you experience, and no amount of Tabasco fully bridges that gap.
